Syrah from site with granitic outcrop in Stellenbosch on Polkadraai, Bottelary Hills and heavier soils in Devon Valley. Whole bunch fermentation between 40-75% depending on the batch. Open top fermenters used with a pumpovers twice a day. Spontaneous primary fermentation and MLF. Wine kept on gross lees in 225L and 1000L French oak for 10 months.
